Yesterday, I made a very simple green smoothie that’s sweet and satisfying and downright yummy. Really easy.
Greenya Colada
water from one small, fresh coconut (about 1 cup)
1 thick slice fresh pineapple, trimmed and diced
1 handful (about 2 cups) fresh, young spinach leaves
agave syrup, maple syrup or honey to taste, if the pineapple isn’t quite sweet enough on its own
2 cups water
Place the coconut water, pineapple, and spinach in a Vitamix or blender and blend until smooth and creamy. Add the water and taste for sweetness. If the pineapple is a little tart, add your choice of liquid sweetener.
If your coconut is young and tender, with the meat still somewhat soft and gelatin-like, a great variation is to add a couple of tablespoons of that young coconut meat to the blender before adding the water, to make a super silky and creamy smoothie with an extra dollup of protein.
