If you haven’t already participated in the activities of Zihuatanejo’s Eco-Vegan Cooperative (Cooperativa Eco-Vegana), now might be the time to jump in and find out what a vegan lifestyle and plant-based eating are all about.
The Cooperativa Eco-Vegana had its beginnings about a year ago in Zihuatanejo, Mexico, when a small group of ecology-minded and health-oriented locals got together and decided to share their knowledge and experiences of a plant-based life and the boons it brings to one’s health and well-being.
In the course of the past year, the coop has promoted veganism, health, music, and culture in Zihuatanejo. The coop invites the public to regular monthly cooking classes providing healthy eating tips and plenty of recipes and other resources for plant-based eating. The group organizes a once-weekly organic and natural products market, Eco-Tianguis Zanka, at Plaza del Artista in downtown Zihuatanejo (along Fisherman’s Walk on Playa Municipal) from 9:00 a.m. to 1:00 p.m. every Saturday. You can sample exquisite vegan fare (tamales, kombucha tea, flax crackers, natural fruit drinks, coconut yogurt, kimchi, and scrumptious vegan tinga and tacos) and purchase organic produce (whatever is in season: papaya, bananas, arugula, tomatoes, sesame seeds, limes, grapefruit, green beans, zucchini, etc.) as well as local handcrafts made of natural materials.
